David Moreau is working to elevate the wines coming from his family’s historic vineyard sites. The fruit for this premier cru are sourced from a small .9 ha plot that is south-facing. The grapes are de-stemmed, gravity-transferred to tank, and experience a 6 day cold maceration. The yeasts used to inoculate the fruit are indigenious to the area. After the full 20 day maceration, the wine is kept in barrel (25% of which is new) for 17 months. Silky tannins mingle with delicate red berry and violet flavours. This terroir yields wines of exceptional depth and considerable minerality, due to limestone bedrock. A brambly wildness and rustic fruit character make this wine the perfect accompaniment to almost any meal.
