Wine Making : pre-fermentation cold maceration. Maceration-fermentation: 2 weeks, during which temperatures do not exceed 25-26°C (77-79°F)
Technique : during the early stages of the fermentation process, all of the must is poured over the floating grape skins everyday. The length of maceration is determined by regular tastings. The wine is then transferred to steel tanks for its elevage.
Tasting Recommendations
Temperature : 15-16°C (59-61°F)
Recommended drinking window : 2 to 5 years
