Description
Colle Stefano is a small winery situated in the hills of Matelica, run by Fabio Marchionni. After recieveing his degree in Agriculture, Fabio returned home and took over the family farm. He started producing Verdicchio di Matelica using organic and bio-dynamic farming methods, which he learned while working at Weingut Zähringer (winery) in Germany. Since then, Fabio has been
producing the cult Verdicchio of the market.
Tasting Notes
A very fresh and aromatic nose with notes of citrus, white grapefruit, white peach, honey, and
subtle floral notes as well. A full bodied, dry white wine with a complex and
balanced acidity. Hints of citrus appear on the palate along with a distinct minerality.
Food Pairings The perfect wine for pairing with any seafood and fish dishes. Pairs exceptionally well with raw fish, such crudo and ceviche. Also goes well with fresh
dishes with lemon, artichokes or tomatoes.

Aging: Under goes 4 months sur lie in stainless
steal tanks, before aging in the bottle.
